Vada Pav Recipe (Mumbai Street Style)

The meal of Vada Pav exists as Mumbai's signature burger through its fried potato fritter cooked with hot spices served inside a soft bun and mixed with tangy condiments and fried green peppers.

Ingredients

For the Batata Vada (Potato Fritter)
  • 4 medium potatoes (boiled and mashed)
  • 1 green chili (finely chopped)
  • 1-inch ginger (grated)
  • 3-4 garlic cloves (crushed)
  • ½ teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 tablespoon chopped coriander leaves
  • 1 tablespoon lemon juice
  • Salt to taste
  • 1 tablespoon oil

  • For the Batter

  • 1 cup besan (gram flour)
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • ¼ teaspoon baking soda
  • Salt to taste
  • Water (as needed to make a smooth batter)

  • For the Dry Garlic Chutney

  • ¼ cup grated coconut (dry roasted)
  • 2 tablespoons peanuts (roasted)
  • 4-5 garlic cloves
  • 2 teaspoons red chili powder
  • Salt to taste                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                 For the Green Chutney                                                                                                                                                                                                                                                                                                    
  • 4 pav (soft bread buns)
  • 2 tablespoons butter (for toasting pav)

    Instructions

             Step 1: Make the Batata Vada Filling                                                                                                                                                                                                

  • Heat oil in a pan, add mustard seeds and let them splutter.
  • Add crushed garlic, chopped green chilies, and grated ginger. Sauté for a few seconds.
  • Add turmeric, red chili powder, coriander powder, and cumin powder. Mix well.
  • Add mashed potatoes, salt, and lemon juice. Mix everything together.
  • Turn off the heat and add chopped coriander. Let the mixture cool.
  • Once cooled, shape the mixture into small round balls.                                                                                                                                                                                                                                                 

               Step 2: Prepare the Batter

    1. In a mixing bowl, combine besan, turmeric, red chili powder, baking soda, and salt.
    2. Gradually add water and whisk to make a smooth, thick batter.                                                                                                                                                                                                                     Step 3: Fry the Vada
      1. Heat oil in a deep pan over medium heat.
      2. Dip each potato ball into the batter, coat evenly, and carefully drop it into the hot oil.
      3. Fry until golden and crispy. Drain on paper towels.

      Step 4: Prepare the Dry Garlic Chutney

      1. In a blender, grind roasted coconut, peanuts, garlic, red chili powder, and salt into a coarse powder. Set aside.

      Step 5: Prepare the Green Chutney

      1. Blend coriander, mint, green chilies, lemon juice, and salt with little water to form a smooth chutney.

      Step 6: Assemble the Vada Pav

      1. Slice the pav in half and toast with butter on a hot pan.
      2. Spread green chutney on one side and dry garlic chutney on the other.
      3. Place the hot vada inside the pav and press gently.
      4.
