- 2 cups Poha (Flattened Rice) (thick variety)
- 1 large Potato (Batata) (peeled and diced)
- 1 small Onion (finely chopped)
- 2 Green Chilies (slit or chopped)
- 8-10 Curry Leaves
- 1 teaspoon Mustard Seeds (Rai)
- ½ teaspoon Turmeric Powder (Haldi)
- 1 teaspoon Salt (or as per taste)
- 1 teaspoon Sugar (optional)
- 2 tablespoons Oil
- ¼ cup Roasted Peanuts
- 1 tablespoon Lemon Juice
- 2 tablespoons Fresh Coriander Leaves (chopped)
For Garnishing:
- Fresh grated coconut (optional)
- Sev (optional, for extra crunch)
Instructions:
Step 1: Prepare the Poha
- Take 2 cups poha in a large bowl.
- Rinse it under running water for a few seconds (don’t over-soak, or it will become mushy).
- Drain the water completely and let it sit for 5 minutes.
- Add ½ teaspoon turmeric, 1 teaspoon salt, and 1 teaspoon sugar to the poha. Mix gently and set aside.
Step 2: Fry the Peanuts
- Heat 1 tablespoon oil in a pan.
- Add ¼ cup peanuts and roast them on low-medium flame until crispy.
- Remove and keep aside.
Step 3: Prepare the Tempering (Tadka)
- In the same pan, heat 1 more tablespoon oil.
- Add 1 teaspoon mustard seeds and let them splutter.
- Add 8-10 curry leaves and 2 green chilies. Sauté for a few seconds.
- Add chopped onions and sauté until they turn soft.
- Add diced potatoes, stir well, and cover the pan. Cook until potatoes are soft.
Step 4: Mix Poha and Cook
- Add the prepared poha to the pan and mix well.
- Cover and cook for 2-3 minutes on low flame.
- Add roasted peanuts, 1 tablespoon lemon juice, and chopped coriander leaves.
- Mix gently and turn off the heat.
Step 5: Serve Hot
- Garnish with fresh coconut and sev (optional).
- Serve hot with tea or pickle.
